Authentic Neapolitan Farmstead Pizza at Unbound Glory Farm

We use only the best ingredients:  organic spring and whole wheat flours, Italian plum tomato sauce from tomatoes grown in Italy’s Parma region, low-moisture whole milk shredded mozzarella, local CT-made fresh mozzarella, local RI-made cured meats, high quality extra virgin olive oil, and our farm’s own seasonal vegetables! 

Our dough recipe starts with a Biga starter, a pre-ferment that adds great depth of flavor and complexity similar to a sourdough.  Cold fermentation then adds great flavor, increased digestibility,  and added nutrients.  This age-old method of making the dough produces a pizza crust that is light, chewy, crunchy… and healthy.  Cooking the pizza in our authentic Italian wood-fired oven brings a true taste of the Italian countryside to Connecticut’s Quiet Corner: light and airy crusts, charred bubbles, and the true mark of authenticity in that no two pizzas look the same from their shape to their spots. 

 

Using a wood-fired oven is an art in and of itself.  Combine that with incredible ingredients and farm-fresh toppings and you will see there is nothing else like it around!

All of our pizzas are 12” pies, in the world of American pizzas that would be considered a small. It is the perfect size for 1-2 people, unless you have the appetite of a farmer (kidding but not kidding!).  Our pizzas also reheat very well due to the chewy airy texture of the dough. 

Our menu will change with the seasons, adding more variety and toppings as our farming season progresses.  Mid summer you can look forward to enjoying our summer squash, garlic and tomatoes on our pizzas… come fall you might find winter squash, potatoes, and broccoli rabe on the menu.

Allium Rex- caramelized onion crema, shredded mozzarella, roasted garlic, shaved Italian heirloom red onions, ricotta, and scallion greens ... $15

Crema- caramelized onion crema, shredded mozzarella, garden-fresh Swiss chard, prosciutto, finished with freshly grated aged asiago  ...$15

Pizza Romano- plum tomato sauce, grated pecorino Romano, oregano, extra virgin olive oil  ... $12

Mushroom and Onion- plum tomato sauce, shredded mozzarella, cremini mushrooms, shaved Italian heirloom red onions, finished with freshly grated aged asiago ... $14
