We typically publish the menu & link for pre-orders, 5 days in advance of our events, and they sell out quickly.

Wood-Fired Farmstead Pizza at Unbound Glory Farm

We use only the best ingredients:  organic spring and whole wheat flours, Italian plum tomato sauce from tomatoes grown in Italy’s Parma region, low-moisture whole milk shredded mozzarella, local CT-made fresh mozzarella, local RI-made cured meats, high quality extra virgin olive oil, and our farm’s own seasonal vegetables!

Our dough recipe starts with a Biga starter, a pre-ferment that adds complexity similar to a sourdough.  Cold fermentation then adds great flavor, increased digestibility, and added nutrients.  This age-old method of making the dough produces a pizza crust that is chewy, with charred bubbles, and an excellent crispy crust. 

 

Our pizzas are 12-13" pies-  the perfect size for 1-2 people, unless you have the appetite of a farmer!!

Our menu changes with the seasons.  We feature as many of the fresh, delicious vegetables we grow here on the farm.  One bite and you will see that there is nothing else like it here in NE CT!!!

Our specialty pies feature vegetables proudly grown on our own farm (except for the mushrooms) and other local ingredients where we can!

Toppings change with the seasons, depending on what is fresh from our fields.

Each event features different specialty pies, dependent upon the harvest, with some repeating favorites as well!

Specialty Pies for July 9th:

La Crema… A white pie with caramelized onion crema, fresh-picked Swiss Chard, shredded mozzarella, local Rhode Island-made prosciutto, and finished with freshly grated aged asiago.      $18

Zucca Bianca … A white pie with caramelized onion crema, shaved heirloom summer squash (zucchini), shredded mozzarella, shaved red onions.  Finished with a touch of extra virgin olive oil & freshly grated aged asiago   … $18         **Add pepperoni, capicola, or prosciutto by request

The Coppa Zolle… A red pie with plum tomato sauce, local Calabro ricotta,  shredded mozzarella, local RI-made capicola, and fire-kissed garlic scapes.   Topped with a touch of fresh-grated aged asiago.      $18

Mushroom-Onion & Crema-  A red pie with plum tomato sauce, dollops of caramelized onion crema, shredded mozzarella, mushrooms, & shaved red onions.  Finished with a touch of grated aged asiago …$18                               **Add pepperoni, capicola, or prosciutto by request

Dairy-free cheese available, gluten-free crusts available (GF crusts contain dairy and eggs, and are baked in the same oven as our regular pies).
