Wood-Fired Farmstead Pizza at Unbound Glory Farm
We use only the best ingredients: organic spring and whole wheat flours, Italian plum tomato sauce from tomatoes grown in Italy’s Parma region, low-moisture whole milk shredded mozzarella, local CT-made fresh mozzarella, local RI-made cured meats, high quality extra virgin olive oil, and our farm’s own seasonal vegetables!
Our dough recipe starts with a Biga starter, a pre-ferment that adds complexity similar to a sourdough. Cold fermentation then adds great flavor, increased digestibility, and added nutrients. This age-old method of making the dough produces a pizza crust that is chewy, with charred bubbles, and an excellent crispy crust.
Our pizzas are 12-13" pies- the perfect size for 1-2 people, unless you have the appetite of a farmer!!
Our menu changes with the seasons. We feature as many of the fresh, delicious vegetables we grow here on the farm. One bite and you will see that there is nothing else like it here in NE CT!!!
